It’s full of polyphenols and antioxidants that may help prevent inflammation. The more enthusiastic (and less substantiated) websites also claim that beet and spinach leaves can help maintain blood sugar levels, lower blood cholesterol levels, lower blood pressure, reduce the amount of oxygen needed during exercise, and everything from your volleyball game in the backyard to your potential Olympic marathon to improve. You’re not quite saying that if we all chewed enough green leaves we would achieve not only health but human compassion, world peace, and cooperation, but the implication is up in the air.
